It is the traditional salami from campaigns of Perugia, is produced with fresh cuts of shoulder, bacon and minced Italian heavy pigs; milled medium grain and flavored with garlic and pepper, stuffed into natural casings and tied by hand.
Hung to dry for a few days in warm humid environment, after the appearance of the characteristic white mold exterior, will be transferred to fresh dry for seasoning. Strong flavor and intense aroma is great with our unsalted bread.
